I originally met Rob of Bottles & Bones in early 2019, he had a great idea to bring very good/fine dining to the Suwanee, GA area. A place were people could meet in comfort, have specialty cocktails and craft beers plus have a choice of magnificent appetizers and fantastic dinner entrees.
Rob imported from Spain two incredible pieces of cooking equipment. These two pieces are the workhorses behind the over the top chops Rob has on his menu. To make matters even better, if possible, Rob put together an elaborate wine schedule. He capitalized on the architecture of his menu to pair a perfect wine with everything on his menu.
If the menu, wine and drinks were not enough he provided a good amount of space in a contemporary but not over the top bar area to have live music. Talk about ambiance, the main dining space is not only gorgeous but very approachable and Rob, his wife and Pete Zakas at Z-Space did a wonderful mind meld to make this area ideal.
Working with Rob and everyone on the team was not perfect or easy but a great example what can happen when communication works well. We were able to take Rob’s ideas, put them on paper and then build it to his specifications. A great challenge but one well worth it and I have nothing but accolades for Rob and his people.
